A CHOICE-EXPERIMENT BASED ANALYSIS OF PROTECTION MOTIVATION THEORY: HEALTH RELATED BEHAVIOR OF CONSUMERS WITH CELIAC DISEASE AgEcon

The underlying components of protection motivation theory (PMT; Rogers 1983) are explored through choice experiment-based analysis within a random utility framework, to account for some of the motivational, cognitive, and affective processes that likely affect celiacs’ propensity to use a novel health-risk reducing product. Those four groups of variables that are aimed to capture threat appraisal and coping appraisal processes as part of the standard PMT (Rogers 1975, 1983; Floyd et al. 2000) are found to contribute significantly to explaining the adaptive response of celiacs. RESUMEN: Cuando un producto tiene atributos de confianza que son valorados por los consumidores, el mercado no funciona de forma óptima. Si existen externalidades negativas derivadas del consumo y la producción es eficiente que el gobierno establezca normas sobre las características del producto, del proceso productivo, del etiquetado o de las responsabilidades del productor. Many consumers lack insight into today’s complex food production systems. This paper investigates the relationship between consumer confidence in the safety of food in general and consumer trust in particular institutions and organisations. The first aim of the study was to develop and validate a scale to measure general consumer confidence in the safety of food. From the analysis, two distinct dimensions emerged that were labelled ‘optimism’ and ‘pessimism’.
